What can you folks tell me about Vol. two. Is it a bootleg? is it just what someone has compiled offline? is it all really them? does it even exist?

According to various sources, some changes were made by the Wilburys, which was out of respect for Roy's death.
They changed their names to lift of the burden of having to make an album which would maybe meet the expectations of what was on the first album a fun project.
As for the number 3 in stead of 2, it will have to do with that to I think, some humorous explanations were given, like "the tapes of Vol. 2 were stolen", "It was a misprint of the artwork" and "There was such pressure to do a Volume 2 that we just went ahead and did a Volume 3."
There is a bootleg called Volume 2.

How much time was Del Shannon with the T.W. and wich songs did he record besides Runaway?

Del Shannon was not part of the Traveling Wilburys, however he made an album with Jeff Lynne and Tom Petty shortly before he took his life early 1990 (Rock On, released 1991).
Before that, Petty produced and played on Del's 1881 album "Drop Down And Get Me".
His song "Runaway", from 1961, was given a new tune by the Wilburys and was on the UK She's My Baby CD single.

It's Jeff singing, as said, Del did not record with the whole group of Traveling Wilburys and this demo also is not the whole Traveling Wilburys.
