Seafood Gumbo

Ingredients:
<UL TYPE=SQUARE>1 cup all purpose flour
1-cup canola oil
2 onions, finely minced
2 tsp. minced garlic
1 Tbsp. chopped, dried parsley
1 tsp. dried thyme
1/2 tsp. celery salt
1/2 tsp. red pepper
2 bay leaves
1 (14.5 oz.) can crushed tomatoes
7 (14.5 oz.) cans chicken broth
Salt and pepper to taste
1 lb. frozen baby okra, sliced
1 lb. claw crabmeat, picked
2 lbs. shrimp, raw, peeled[/list]

Preparation:
The traditional method without cheating is to:
Prepare all vegetables, and have broth ready to pour, before you
begin the roux. I stir the spices/seasonings in with the veggies to
make it easier.

Start with the flour in a cold soup pot (at least 10qts.) and
slowly stir in oil over medium-low heat. STIR CONSTANTLY for an hour
till it turns the color (approximately) of peanut butter. If the roux
burns, pour it out and start over, otherwise it ruins the seafood!

Add vegetables, except okra, all at once. The mixture will steam up
and instantly thicken the roux. Stir together for about 5 more minutes
then slowly add the chicken broth. Put the crabmeat in to simmer after
you have added the chicken broth.

Rest your arm and have a libation. Slice up the okra and add it to
the pot (now it's officially gumbo). Let simmer on low heat for about
2 hours. Add the shrimp 20 -30 minutes before serving.

Oatmeal Caramel Bars

Ingredients:

Crust/Topping:
<UL TYPE=SQUARE>1 and 2/3 cups all-purpose flour
2 and 1/3 cups quick-cooking oatmeal
1-cup brown sugar
1/2 tsp. cinnamon
Pinch of salt
1 tsp. baking soda
1-cup butter, softened[/list]

Filling:
<UL TYPE=SQUARE>1 cup caramel syrup
1/4-cup flour
1/3-cup pecans, chopped
1-cup semi-sweet chocolate chips[/list]

Preparation:
Combine all crust ingredients in a large bowl and mix well. Place half
of the mixture in the bottom of a greased 13 x 9-inch baking pan.
Press evenly along bottom of pan. Bake at 350 degrees for 10 minutes.
Meanwhile, combine caramel, flour, pecans and chocolate chips and mix.
Remove crust from oven, pour caramel mixture over crust, and spread
evenly. Sprinkle remaining crust mixture over the top and bake for
about 20 minutes more at 350 degrees. Allow cooling and refrigerating
for several hours before cutting into squares and serving.

Hearty Bean and Vegetable Stew

Ingredients:
<UL TYPE=SQUARE>1 lb *assorted dry beans
2 cups vegetable juice
1/2 cup dry white wine (optional)
1/3 cup soy sauce
1/3 cup apple or pineapple juice
1/2 cup celery, diced
1/2 cup parsnips, diced
1/2 cup carrots, diced
1/2 cup mushrooms, diced
1 onion, diced
1 tsp basil, dried
1 tsp parsley, dried
1 bay leaf
3 clove garlic, minced
1 tsp black pepper, ground
1 cup rice or pasta, cooked
Vegetable stock or water[/list]

Preparation:
Rinse beans and then soak overnight in water.
Drain beans and place in crockpot. Add vegetable juice,
wine, soy sauce, and apple or pineapple juice. Cover
with vegetable stock or water; the amount added depends
on whether you prefer a soup (more liquid) or a stew
(less). The juice adds just a tad of sweetness and the
soy sauce adds depth and the tang of salt.

Cook on high for 2 hours. Add vegetables, herbs, and
spices, and cook for 5-6 hours on low until carrots and
parsnips are tender. When tender, add rice or pasta and
cook for one additional hour on low.

*For beans use 3 or 4 kinds, such as black, red kidney,
pinto, baby lima, lentil, and green and/or yellow split
peas. The more the merrier!

Chinese Five Spice Powder

Ingredients:

2 tsp. fresh ground pepper
2 tsp. fennel seeds, crushed
2 tsp. ground cloves
2 tsp. ground cinnamon
1 1/2 tsp. ground ginger

Preparation:
Mix well.
Use with fish or pork.

Cheesey Bruschetta

Ingredients:
<UL TYPE=SQUARE>1 (8 ounce) loaf French baguette
1 tablespoon olive oil
2 roma (plum) tomatoes, thinly sliced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 teaspoon garlic powder
1 pinch ground white pepper
1 (8 ounce) package sliced mozzarella cheese
1 (6 ounce) package sliced provolone cheese[/list]

Preparation:
Preheat oven to 350 degrees F (175 degrees C).
Slice the baguette into 1/2 inch thick diagonal slices. Arrange the
slices in a single layer on a baking sheet. Brush both sides of each
slice with the olive oil. Place tomato slices and a sprinkling of
basil and oregano on the bread slices. Sprinkle the tomatoes, basil
and oregano with the garlic powder and white pepper. Cover the tomato
slices with slices of the mozzarella and provolone. Place more basil,
oregano and tomato slices on top of the cheese.
Bake in the preheated oven for 7 to 10 minutes, or until the cheese
is bubbly.

Cow Chip Cookies

Ingredients:
<UL TYPE=SQUARE>3/4 cup butter - melted
1 cup vegetable shortening
2 cups granulated sugar
2 cups dark brown sugar, firmly packed
4 large eggs
2 Tablespoons Vanilla
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
2 cups rolled oats
2 cups corn flakes cereal - uncrushed
1 1/2 cups milk chocolate chips
1 1/2 cups white chocolate chips
1 cups flaked coconut
1 cup pecan pieces[/list]

Preparation:
Pre-heat oven 350*
Cream butter, shortening, sugars, eggs and vanilla; beat until
fluffy. Add flour a little at a time. Stir in remaining ingredients,
adding one at a time. Drop an ice-cream scoop sized dough ball onto a
wax paper lined cookie sheet. 3 to 4 cookies per sheet.
Bake 12 to 15 minutes. Leave cookies on waxed paper and remove to
wire rack to cool. When cool enough to handle peel off paper.

Apple and Green Chile Salad
Serves: 8

Ingredients:
<UL TYPE=SQUARE>2 medium red and green apples, cored and chopped
2 stalk celery, sliced
1/2 cup chopped walnuts, toasted
1 (4 oz.) can ORTEGA® Diced Green Chiles
1/3 cup prepared ranch-style salad dressing
1/4 cup mayonnaise [/list]

Preparation:
COMBINE apples, celery, nuts, chiles, salad dressing
and mayonnaise in medium bowl. Cover; refrigerate for 1 hour.
Serve over lettuce leaves.

Chicken with Supreme Sauce
Serves: 8

Ingredients:
<UL TYPE=SQUARE>2 1/2 lb broiler-fryer chicken
1 tablespoon salt
1/8 teaspoon pepper
1 can cream of chicken soup
2 teaspoons dried parsley
1 can onions (16 oz)
3 cup hot cooked rice[/list]

Preparation:
Cut chicken into pieces; cut each breast half into halves.
Arrange chicken sides up and thickest parts to outside in
oblong baking dish 12 x 7 1/2 x 2-inches. Sprinkle with
salt and pepper. Cover loosely and microwave on high
(100%) until chicken is done 20 to 25 minutes. Remove
chicken from dish; reserve juices. Stir soup and parsley
flakes into chicken juices. Arrange chicken in dish
coating with soup mixture. Add onions. Cover loosely
and microwave until hot 7 to 9 minutes. Serve with rice.

Hearty Tomato Chickpea Soup

Ingredients:
<UL TYPE=SQUARE>About 2 cups chicken broth, vegetable broth, or
water, as needed
2 to 3 tbs extra virgin olive oil
1 medium onion, chopped (about 1 1/2 to 2 cups)
1 medium carrot, finely chopped (about 3/4 cup)
1 stalk celery, finely chopped (about 1/2 cup)
1 tbs cumin seed
2 garlic cloves, peeled, or 2 tsp (or more to taste) prepared chopped
garlic
2 to 3 cups canned chickpeas, drained and rinsed
1 can (28 ounces) diced tomatoes (3 cups diced tomatoes)
Salt and freshly ground black pepper
2 to 3 tbs coarsely chopped flat-leaf parsley or prepared pesto sauce
Tabasco® sauce (optional) [/list]

Preparation:
In a small saucepan, heat the 2 cups broth or water over
low heat, covered. In a large pot, heat the 2 to 3 tbs
olive oil. Add the onion, carrot, and celery and cook
over low heat, stirring, about 3 minutes. Add the cumin
seeds and cook until fragrant, about 1 minute.

Add the 2 garlic cloves, 2 to 3 cups chickpeas, and 3
cups diced tomatoes and cover. Bring the soup to a boil.
Lower the heat and simmer for 10 to 12 minutes, adding
the hot broth or water to maintain a soup consistency.

Cream Cheese Patties

Ingredients:
<UL TYPE=SQUARE>1 (3 ounce) package Neufchatel cheese, softened
1 cup crushed buttery round crackers
1 cup chopped walnuts
3 eggs
1 small onion, chopped
1/4 teaspoon dried sage
1/4 teaspoon salt
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed cream of mushroom soup
1/4 cup milk
1/4 cup sour cream[/list]

Preparation:
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine the cream cheese, crushed crackers,
walnuts, eggs, finely chopped onion, sage and salt. Mix well.
Heat oil in a medium skillet over medium high heat. Drop cheese
mixture by rounded tablespoonfuls into the hot pan. Flatten with a
spatula and let brown. Turn and brown other side.
Place cooked patties in a 8x12 inch baking dish. Combine the soup,
milk and sour cream and mix well. Pour over patties. Bake at 350
degrees F (175 degrees C) for 20 minutes or until bubbly.

Corned Beef Casserole

Ingredients:
<UL TYPE=SQUARE>1 cup milk
1 can corned beef
2 cups cooked macaroni (1 cup raw)
1 can cream of chicken soup
1/4 cup chopped onion
1/2 cup sharp cheese, grated
salt & pepper to taste[/list]

Preparation:
Cook and drain the macaroni. Add all of the above
ingredients and put into a large casserole dish.
Sprinkle additional cheese on top. Bake in a 375
degree oven for 45 minutes to an hour.

Cajun Chowder
Serves: Makes about 2 gallons

Ingredients:
<UL TYPE=SQUARE>2 tablespoons olive oil
1 large Spanish onion, chopped (medium dice)
2 carrots, diced
2 ribs celery, diced
1 red bell pepper, cored and finely diced
1 yellow bell pepper, cored and finely diced
1 green bell pepper, cored and finely diced
3 cloves finely chopped garlic
1 cup cream sherry
2 cups chopped clams, fresh or canned (reserve juice from clams if
using canned)
3 cups clam juice (use all bottled clam juice or clam juice drained
from canned clams plus bottled juice)
3 cups chicken stock or broth
2 tablespoons clam paste (or use clam base or a fish bouillon cube)
2 tablespoons chicken base
1/3 cup chopped fresh parsley
1/3 cup fresh chopped chives
4 ounces bacon, finely diced, cooked until brown, drained lightly
11/2 teaspoon white pepper
1 tablespoon Cajun seasoning (Paul Prudhomme® brand or other blend)
1 teaspoon cayenne pepper
1 teaspoon freshly chopped basil
1 tablespoon dried oregano
1 tablespoon lemon pepper
1 teaspoon salt
2 cups diced canned tomatoes (undrained)
1 1/4 cups tomato purée or 1 can (12 ounces) tomato paste
1 quart water
1 quart whipping cream
1 quart milk
2 cooked baked potatoes, peeled and diced
1/4 cup cornstarch mixed with 1/2 cup water until smooth[/list]

Preparation:
Heat olive oil in large sauté pan. Add onion, carrots, celery,
bell peppers and garlic; sauté until tender, about 5 minutes.
Add sherry and cook over medium heat until liquid is reduced
by two-thirds. Add clams, clam juice, stock, clam paste
and chicken base, bacon, seasonings, tomatoes, purée
and water. Bring to low boil and cook, uncovered, for 1 hour. While
stirring,add cream, milk and potatoes. Reduce to simmer. Gradually
thicken with cornstarch and water mixture. Consistency
should be thick enough to coat back of spoon. Cook until
heated through. Taste and adjust spices if needed.

Turkey Shepherd's Pie
Serves: 6

Ingredients:
<UL TYPE=SQUARE>2 onions (sliced)
2 tablespoons vegetable oil
4 cups turkey/chicken (cooked & chopped)
1/4 cup whole wheat flour
2 cups chicken stock or broth
2 cups carrots (sliced & steamed)
2 cups tomato/canned (peeled & diced)
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
6 potatoes (cooked & mashed)[/list]

Preparation:
In a large saucepan, sauté the onions in the oil for 5 minutes.
Add the turkey (or chicken). Sprinkle in the flour, stir to
blend. Add the chicken stock, carrots, tomatoes, thyme,
and rosemary. Cook over medium heat until thickened. Pour into a
lightly oiled 3-quart casserole. Spread the potatoes over the top.
Bake in a 375F oven for 20 to 30 minutes, or until
browned.

Citrus Simmered Steak

Ingredients:
<UL TYPE=SQUARE>2 lb. round steak
1/2 cup drained mushrooms and stems
1 md. onion sliced
2 tablespoons catsup
1 tablespoon soy sauce
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 cup water
1 tablespoon cornstarch[/list]

Preparation:
Cut round steak into pieces to fit in the crock pot. Put
the steak in the pot. Mix together all other ingredients
and pour over the steak. Cover and cook on high for
about 4 hours or until the meat is done.

Baked Pasta
Serves: 4-6

Ingredients:
<UL TYPE=SQUARE>1 lb. large pasta like shells
1-3/4 cups ham cut in cubes
1-1/2 cups mozzarella cut in cubes
1 cup fresh ground parmesan
3 egg yolks
butter[/list]

For the Béchamel sauce:
<UL TYPE=SQUARE>24 fluid oz. milk
5 Tbsp. unsalted butter
2/3 cup flour
pinch of nutmeg
pinch of salt[/list]

Preparation:
First prepare the ingredients.Once you have everything ready put the
water on for the pasta and make the Béchamel sauce.
Start by warming the milk.In another pan melt the butter then add and
blend the flour for about 2- 3 minutes mixing constantly with a
wooden spoon. Use a low heat. Once the butter and flour are blended
add the milk a little at a time. Mix continuously with a wooden
spoon. Be certain to avoid lumping!When you've mixed in all the milk
grate a bit of nutmeg on top, just a dusting. Add a pinch of salt too.
Continue cooking the Béchamel, stirring constantly, until it thickens
and becomes smooth. Once the Béchamel is ready put it in a large
mixing bowl to cool down a bit. Add the pasta to the water and cook
it. It should be firm to the bite you don't want to cook it until
it's soft as it will continue to absorb liquids when you bake it.
When the pasta is about ready mix the mozzarella, ham, parmesan and
egg yolks into the Béchamel sauce. The drain the pasta well and add
it too.Now you can put it into your baking dish. Add some pieces of
butter on the top along with a sprinkle of parmesan.Bake in a oven
preheated to 375° for 20 to 25 minutes or until it starts to brown on
the top.

Chocolate Cobbler

Ingredients:

Filling:
<UL TYPE=SQUARE>3/4 cup sugar
1 cup all-purpose flour
1/4 teaspoon salt
2 teaspoons baking powder
2 tablespoon cocoa
1/2 cup milk
3 tablespoon melted butter
1 teaspoon. vanilla
1/2 cup chopped nuts (optional)[/list]

Topping:
<UL TYPE=SQUARE>1/2 cup sugar
1/2 cup brown sugar
1/4 cup cocoa
1 1/2 cups water [/list]

Preparation:

For filling, sift dry ingredients into a 9-inch pan. Stir in milk,
butter and vanilla. Spread batter evenly in pan.

For topping: Mix sugars with cocoa and sprinkle over batter.
Pour water over all. Bake at 350 degrees for 45 minutes.
Serve warm or cold with ice cream and whipped topping.

Easy Breakfast Nacho Bake
Serves: 4

Ingredients:
<UL TYPE=SQUARE>8 ounces bulk breakfast sausage, cooked, drained and crumbled
4 large eggs, lightly beaten
1/4 cup sliced green onions
2 tablespoons melted butter
1 package tortilla chips, coarsely crumbled
2 cups shredded cheddar cheese
1 (16-oz.) jar ORTEGA® Salsa Prima Homestyle Mild [/list]

Preparation:
PREHEAT oven to 350° F.
COMBINE sausage, eggs and green onions in medium bowl.
POUR butter in medium baking dish; add sausage mixture. Top with
chips; sprinkle with cheese.
BAKE for 10 to 12 minutes or until eggs are set and cheese is melted;
top with salsa.

Tossed Egg Salad
Serves: 6

Ingredients:
<UL TYPE=SQUARE>1 head lettuce
6 hard-boiled eggs, sliced
1 small onion, thinly sliced and separated in rings
1/2 tsp. salt
1/4 tsp. pepper
Dash paprika
1/2 cup salad oil
1/4 cup vinegar
2 tsp. Worcestershire sauce
2 Tbs. snipped parsley
1/4 cup grated sharp cheddar cheese[/list]

Preparation:
Break lettuce into bite-size pieces into salad bowl. Alternate layers
of egg and onion rings. Combine next 7 ingredients for dressing. Add
to lettuce with cheese; toss lightly.

No-Bake Cheesecake

Ingredients:
<UL TYPE=SQUARE>1 1/2 cups broken vanilla wafer cookies
1/2 cup silvered almonds, toasted
1/4 cup butter or margarine, melted
11 ounces cream cheese
1 1/2 cups milk, divided use
1/4 cups fresh lemon juice
2 tsp. freshly grated lemon peel
1 envelope unflavored gelatin or agar agar
1/2 cup honey
Fresh fruits, such as raspberries, blueberries, strawberries to serve
with[/list]

Preparation:
Place cookies and nuts in blender or food processor
container; process until coarse crumbs. Add melted butter;
process until blended. Pour crumb mixture into 9-inch
springform pan; spread and press evenly onto bottom and up
sides of pan to form crust. Freeze while preparing filling.
Using electric mixer, beat cream cheese until smooth.
Slowly add 1 1/4 cups milk, mixing until smooth and well
blended. Beat in lemon juice and peel; set aside.
In small saucepan, sprinkle gelatin over remaining 1/4 cup
milk; let stand 1 minute. Stir over low heat until gelatin is
completely dissolved. Stir in honey; whisk to blend. Add to
cheese mixture, mixing until well blended. Freeze 15 minutes
then whisk partially set cheesecake mixture until smooth.
Pour into prepared crust and refrigerate at least 2 hours.

Spanish Lentils and Rice

1/2 can diced canned tomatoes can be substituted
for the fresh tomatoes. Serve
with cornbread and coleslaw.

Serves: makes 6 cups

Ingredients:

2 cups water
1 medium onion, chopped
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup rice (basmati is very good)
2 medium tomatoes, coarsely chopped
2 cups chicken broth
Salt and pepper, to taste [/list]

Preparation:
Prepare lentils: Rinse and sort lentils. Cook lentils in water for
20 minutes. Drain. Prepare rice: Sauté the onion and garlic in the
olive oil until onion is translucent. Add rice and sauté until rice
is translucent, stirring frequently. Prepare final dish: To the rice
mixture, add lentils, tomatoes, and broth. Bring to a boil, lower
heat and partially cover. Cook for an additional 30 minutes or until
rice and lentils are tender. Add salt and pepper to taste.

Malt Vinaigrette

Besides being wonderful over fish and chips, malt vinegar
makes a full-flavored salad dressing.
Serves: Makes about 1 1/2 cups

Ingredients:
<UL TYPE=SQUARE>1/2 cup malt vinegar
1 teaspoon garlic, minced
1 teaspoon Dijon mustard
2 teaspoons parsley, chopped
1 cup olive oil
Salt and pepper to taste[/list]

Preparation:
Add the vinegar, garlic, Dijon and parsley to a food
processor. Pulse until blended. With the machine running,
slowly drizzle in the oil. Check the seasonings. Use
immediately or cover and store in the refrigerator.

Navajo Chicken

Ingredients:
<UL TYPE=SQUARE>2 lb. chicken breasts, cut into half-inch cubes
4 Pasilla or Ancho chiles
8 California chiles
5 garlic cloves, minced
2 C. carrots, sliced
1 C. onion, sliced
2 C. mushrooms, sliced
1 C. corn
1 pinch pepper
1 pinch salt
1 pinch cumin
3 T. flour
3 T. cooking oil[/list]

Preparation:
The base sauce for this dish is made with a two-to-one
combination of California chiles and Pasilla or Ancho chiles .
Start by bringing three to four cups of water to a boil. Prepare
the peppers by removing stems. Add the peppers to the water
and cook for 10 to 15 minutes or until soft.

Puree the chiles and garlic in a blender, then strain into a pan
and add a pinch of cumin, a pinch of pepper and a pinch of
salt. Stir to mix. Bring the sauce to a medium-thick consistency
by slowly mixing in a flour slurry made up of three tablespoons
of flour mixed with 1/4 cup water.

In a small pan, brown the cubed chicken, carrots, mushrooms
and onions in three tablespoons of oil. Make sure the chicken
is browned evenly on all sides (this should take about ten
minutes). Remove all excess oil, stir in pureed ingredients, add
the corn, and let simmer for about 20 to 25 minutes. Taste for
flavor, and adjust seasonings as necessary. For more
spiciness, add jalapeño peppers.

Marshmallow Pops
These are also terrific made with raspberry chips!

Serves: Makes 18-20

Ingredients:
<UL TYPE=SQUARE>2 C. (350 g) semisweet chocolate chips
4 1/2 tsp. vegetable oil
36 to 40 large marshmallows
18-20 wooden (popsicle) sticks
1 C. (2,5 dl) flaked coconut
1 C. (2,5 dl) ground walnuts or pecans
3/4 C. (1,75 dl) colored or chocolate sprinkles[/list]

Preparation:
Combine chocolate chips and oil in shallow microwave-safe
bowl; heat until melted. Stir until smooth. Thread two
marshmallows onto each wooden stick. Roll marshmallows
into melted chocolate, turning to coat. Allow excess to drip off.
Roll in coconut, walnuts or sprinkles. Place on wax
paper-lined baking sheets. Refrigerate until firm.

4th of July Bean Casserole

Ingredients
<UL TYPE=SQUARE>l lb (450g) Sliced Bacon, diced
l lb (450g) Ground Beef, or Sausage or mix of both
1 C (250ml) Chopped Onion
1 lg can Pork & Beans (28 oz 875ml)
1 can Lima Beans, rinsed & drained
1 can Kidney Beans, rinsed & drained
1/2 C (125ml) Barbecue Sauce
1/2 C (125ml) Ketchup
1/2 C (100g) Sugar
1/2 C (~100g) Packed Brown Sugar
2 T Prepared Mustard
2 T Molasses
1 tsp Salt
1/2 tsp Chili Powder[/list]


In large skillet, cook bacon, beef/sausage, and onion
until meat is browned and onion tender. Drain off extra fat.

Transfer to a greased 2 1/2 qt. baking dish.

Add all of the beans and mix well.

In small bowl, combine remaining ingredients; stir
into beef and bean mixture.

Cover & bake 350F (180C) degrees for 45 minutes.

Uncover and bake 15 minutes longer (or even longer if juicy)

Pineapple Bacon Burgers

Ingredients
<UL TYPE=SQUARE>2 lb (900g) Lean Ground Beef
1/2 C (125ml) Barbecue Sauce
1 can Pineapple Slices (can=8 oz)
8 slices Bacon
4 Burger Buns, use your favorite
to taste Ground Black Pepper
to taste Salt[/list]

Prepare grill for indirect cooking or your favorite method for cooking
burgers.

In a large bowl, mix together the lean ground beef and barbecue sauce.

Season with salt and ground black pepper.

Shape the beef mixture into 4 large patties.

Place a slice of pineapple on top of each patty.

Crisscross 2 bacon strips around each burger, and secure with
toothpicks.

Brush oil on grate and place burgers on grill over medium low heat.

Cook, covered, until the burger is cooked through.
You will need to turn the burgers often to avoid burning the bacon.

Remove toothpicks and add to a toasted bun and enjoy.

Basic Barbecue Rub

Preparation Time: 10 minutes

1/4 C (60ml) Dark Brown Sugar

1/2 tsp Celery Seeds[/list]

In a small mixing bowl, combine all the ingredients with
whisk to mix.

Store the rub in a sealed jar away from heat and light. The rub
will keep for several months.

Rub in about 1 to 2 tablespoons per pound of meat.

Great Honey Corn Bread

Preparation Time: 15 minutes
Cooking Time: 25 to 30 minutes

Ingredients
<UL TYPE=SQUARE>1 7/8 C Yellow Cornmeal
1 1/2 C (210g) Flour
1/2 C (100g) Sugar

3 Eggs, slightly beaten
3/4 tsp Real Vanilla Extract
6 T Butter, melted

Preheat oven to 350F (180C).

Grease a 10 inch round cast iron skillet. When the oven is
heated place the pan into the oven to season it. This is
important to make the proper crust on the corn bread.

In a bowl, mix together the flour, cornmeal, sugar, baking
powder, baking soda
and salt.

In another bowl, mix together the butter milk, butter, eggs,
honey and vanilla until smooth.

Make a well in the dry ingredients and add in the milk mixture.

Remove the skillet from the oven and pour in the batter. Place
the skillet back into the oven and bake for 25 to 30 minutes.

After removing the corn bread from the oven it is best to let
the corn bread rest for 10 minutes before turning on to a nice plate.

Enjoy warm with a little honey butter.

Caribbean Pork Roast

Preheat oven to 350F (180C) degrees.

In a small bowl, blend olive oil, pepper, nutmeg
and cinnamon.

Rub onto boneless pork roast.

Place the roast in a shallow pan.

Roast in the oven for 45 minutes to 1 hour or until
internal temperature is 160F (71C) degrees.

Remove the roast from oven and let rest for 10 minutes
before slicing.

Enjoy sliced with your favorite side dish.

can substitute some parsley if not enough
basil but the recipe needs to be mostly basil
2 cloves Garlic (can use more or less garlic to your taste)
1/2 C (125ml) Pine Nuts (can substitute unsalted pecans
or walnuts)
1/2 C (125ml) Parmesan Cheese, freshly grated
1/2 C (125ml) Romano Cheese, freshly grated
1/2 C (125ml) Extra Virgin Olive Oil
to taste Salt
to taste Ground Black Pepper[/list]

To make the Pesto, combine the basil leaves, garlic, and
pine nuts in a blender or food processor and puree to
desired smoothness. Do not over puree! You want the
consistence to be kind of a wet crumb look and you want
to be able to identify the ingredients.

Add the cheeses and blend briefly.

Poor in the olive oil and mix well.

Use immediately or store in covered glass jar in
fridge for up to a week. A skim of oil on the surface
will retard darkening of the sauce.

Pesto is traditionally tossed with trenette, a flat ribbon
pasta similar to linguine but fresh. Sometimes green beans
and sliced potatoes are cooked with the pasta, making the
dish more robust.

TOMATO CELERY CHOW-CHOW

INGREDIENTS:
<UL TYPE=SQUARE>1 peck half ripe tomatoes
2 cup diced celery
6 med onions
6 green sweet peppers, chopped
2 quarts vinegar
2 2/3 cup brown sugar
1/2 cup salt
1/4 teaspoon nutmeg
2 ounces mustard seed[/list]

DIRECTIONS:
Scald, peel, chop, and drain tomatoes. Add celery, onions,
and peppers. Scald and cool vinegar. Add sugar, salt,
mustard seed, and nutmeg. Combine with vegetables. Stir
all together thoroughly 3 or 4 times at intervals of 1/2
hour. Let stand 6 weeks before using.

INGREDIENTS:

In large skillet, heat olive oil. Add garlic and green

Prepare pasta according to package directions; drain.

Sprinkle with Parmesan cheese and serve immediately.

Almond Jade Stir Fry
Serves: 4

Ingredients:
<UL TYPE=SQUARE>1 1/2 tbs favorite oil, -- divided
2 cloves garlic, -- halved
1/2 cup whole blanched almonds
8 cups assorted *vegetables, thinly sliced
2 to 3 tsp minced fresh garlic
1/3 cup water
3 tbs reduced-sodium soy sauce
2 tsp cornstarch
Salt and pepper to taste
1 teaspoon oriental sesame oil (optional)
3 cups cooked brown rice[/list]

*(Vegetables: carrots, broccoli, red and green peppers,
zucchini, crook neck squash, and green beans).

Preparation:
Heat 1 1/2 tsp favorite oil and garlic in large nonstick
skillet over medium heat. Add almonds, cook and toss
about 8 minutes until lightly browned, removing garlic
after 4 minutes. Remove almonds with slotted spoon; set

Green Apple Salad

Ingredients:
<UL TYPE=SQUARE>1 head red leaf lettuce or other tender lettuce
4 green apples, pared and diced
1/4-cup pecans, chopped
1/4-cup olive oil
1/4-cup apple cider vinegar
Salt and pepper[/list]

Preparation:
Wash and pat dry lettuce leaves and place in a large bowl. Add apples
and pecans. Combine oil and vinegar and salt and pepper in a cruet and
shake well. Just before serving, pour dressing over salad and toss
gently.

Creole Beef and Pepper Strips with Curly Noodles
Serves: 5-6

Ingredients:
<UL TYPE=SQUARE>3/4 pound boneless beef round steak
1 green or red bell pepper chopped
1 medium onion chopped
1 clove garlic crushed
1 medium tomato chopped
1 beef bouillon cube
1/2 cup boiling water
1 tablespoon chopped parsley
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons cornstarch
2 tablespoons cold water
6 ounces curly noodles[/list]

Preparation:
Slice steak into diagonal strips bout 1/4 inch thick.
Combine steak, pepper, onion, garlic and tomato in a 3
1/2 quart slow cooker. Dissolve bouillon cube in boiling
water. Add to slow cooker with parsley, thyme, salt and
pepper. Cover and cook on low about 7 hours or until
steak is tender. Turn control to HIGH. In a small bowl,
dissolve cornstarch in cold water. Stir into slow cooker.
Cover and cook on HIGH about 10 minutes or until slightly
thickened. Meanwhile, cook noodles according to package
directions and drain. Spoon steak mixture over the
noodles.

Potato Casserole
Serves: 4

Ingredients:
<UL TYPE=SQUARE>1 1/2 pounds (4 to 5 medium) potatoes, peeled & diced
1/2-teaspoon salt
3 tablespoons butter or margarine
2 tablespoons flour
salt and pepper
2 cups milk
2 hard-boiled eggs, peeled & sliced
2 tablespoons chopped onion
3 tablespoons dried breadcrumbs[/list]

Preparation:
Place potatoes in large saucepan. Cover with cold water. Add
1/2-teaspoon salt and bring to a boil. Reduce heat to low and cook 20
to 25 minutes or until potatoes are tender. Drain; reserve. Melt 2
tablespoons butter in medium saucepan. Add flour, salt, and pepper;
cook until bubbly. Add milk; stir well. Cook, stirring constantly,
until thickened. Combine potatoes, hard-boiled eggs, onion, salt, and
pepper in lightly greased 1 1/2 quart casserole. Add white sauce;
blend lightly with spatula. Melt remaining 1-tablespoon butter. Add
breadcrumbs; mix well. Sprinkle buttered crumbs over casserole. Bake
at 350 degrees for 30 minutes. Serve hot!

Country Ham and Cornbread Casserole
Serves: 6

Ingredients:
<UL TYPE=SQUARE>2 cups cubed cooked ham
1/2 cup chopped green onions
1/4 cup of margarine or butter, melted
2 eggs well beaten
1 (11-ounce) can corn with red and green peppers, drained
1 (8.5 ounce) can cream style corn
1 cup Martha White Self Rising White Cornmeal
3/4 cup buttermilk
4 ounces (1 cup) shredded Cheddar Cheese[/list]

Preparation:
Heat oven to 350 degrees F. Grease 12X8-inch (2 Qt.) baking dish. In
large bowl, combine all ingredients except cheese. Pour into greased
baking dish. Bake at 350 degrees F for 35-55 minutes or until golden
brown and set. Sprinkle with cheese. Bake an additional 2-3 minutes
or until cheese is melted. Let stand for 5 minutes before serving.
Cut into squares.

Spinach Dip

Ingredients:
<UL TYPE=SQUARE>1 frozen pkg. chopped spinach
1 loaf sheepherders bread
1-cup sour cream
1-cup mayonnaise
1 envelope dry vegetable soup mix
3 green onions, chopped (opt.)
1 sm. can water chestnuts, chopped (opt.)[/list]

Preparation:
Put the frozen spinach in a colander and run water over it until it is
thawed out (or put it in the refrigerator ahead of time to thaw it
out). While you are doing this, cut the top of the bread off to make a
bowl. Chop up the top of the bread and save it to use for the dip.
Scoop out the bottom part of the bread to make a place for the dip.
Wring out the spinach with your hands to get out all the water. Mix
all the ingredients together (except the bread) and put in the
refrigerator for at least 4 hours. Fill the bread bowl with the dip
and serve with the bread, crackers or vegetables.

Chinese Salad

Doesn't keep well overnight because of the
consistency.

Ingredients:
<UL TYPE=SQUARE>1 head cabbage
1/2 green onions; bunch, chopped
2 packages Ramen Noodles; uncooked and broken into pieces
(discard seasonings) 2 tablespoons sunflower seeds
1 cup sliced almonds
1/4 cup margarine
1/2 cup sugar
3/4 cup oil
1/4 cup red wine vinegar
1 tablespoon soy sauce [/list]

Preparation:
Chop cabbage in medium pieces, add chopped green onions.
Brown noodles, sunflower seeds, almonds in margarine (set
aside to cool). Boil sugar, oil, vinegar, and soy sauce,
cool completely. Toss everything together just before
serving.

BBQ Ribs

Ingredients:
<UL TYPE=SQUARE>3 pounds short ribs (or chicken)
2 cups chicken broth
2 cups water, or enough to barely cover ribs
1 tablespoon brown sugar
1/4 cup cider vinegar
1/4 cup catsup
2 tablespoons tomato paste
1 tablespoon dry mustard
1 teaspoon worcestershire sauce
1/4 teaspoon ground cloves
1 teaspoon chili powder
1/4 teaspoon cayenne pepper [/list]

Preparation:
THE DAY BEFORE GRILLING THE RIBS, put the sugar and vinegar
in a pot large enough to hold the ribs and place over medium
heat on top of the stove. Cook until the vinegar reduces and
forms a syrup with the sugar, about 8 minutes. Watch carefully
as the syrup will suddenly darken in color. Immediately add
broth, water, catsup, tomato paste, mustard, Worcestershire,
cloves, chili powder and pepper and bring to a boil. Add the
ribs and cook 20 minutes. (for chicken, cook for 10 minutes)
Remove from heat, remove the ribs from the liquid and place
covered in the refrigerator. Cook the liquid over medium heat
until it becomes thick and syrupy.

DAY OF GRILLING, Place the ribs on the grill so they are not
directly over the coals or flame and cover the grill so that
smoke collects inside. If your grill does not have a cover,
improvise one out of aluminium foil. Cook for 40 minutes,
basting with barbecue sauce every 10 minutes. When ribs are
well heated, remove to a platter and serve with extra sauce
on the side.

PASTA WITH EGGPLANT SAUCE

INGREDIENTS:
<UL TYPE=SQUARE>1 tablespoon olive oil
1 small onion, chopped
1 large garlic clove, minced
1/2 green bell pepper, cubed
1 pound eggplant, peeled, cubed
2 pounds tomatoes, cubed
1/2 cup dry red wine
2 tablespoons fresh basil, (or 1 teaspoon dry)
2 tablespoons fresh oregano, (or 1 teaspoon dry)
salt and pepper to taste 12 ounces spaghetti, cooked[/list]

DIRECTIONS:
In a large saucepan, heat olive oil over medium heat. Add
onion and garlic; cook until onion is soft. Stir in bell
pepper, eggplant, tomatoes, wine, basil, and oregano. Season
with salt and pepper, if desired. Reduce heat, cover and
simmer 30 minutes. Serve sauce over noodles.

CHOCOLATE CHIP CHEESECAKE DIP

INGREDIENTS:
<UL TYPE=SQUARE>1/2 c Raisins
1 tb Brandy
2 c Cream Cheese; Softened
1/2 c Whipping Cream
1/2 ts Vanilla Extract
1/4 c Dark Brown Sugar
1 ts Cinnamon; Ground
1/2 c Mini Chocolate Chips
1 x Cinnamon; Ground [/list]

DIRECTIONS:
Mix the raisins and brandy (making sure all the raisins
are coated) and let soak for 15 minutes. In another bowl,
beat the cream cheese and whipping cream until well
blended and smooth. Add the vanilla, mixing well. Blend
in the brown sugar and cinnamon. Mix in the "slushed"
raisins and chocolate chips, blending well. Garnish with
a light dusting of cinnamon. Serve at room temperature.
DIPPERS: Graham Crackers, Honeydew Melon, Strawberries,
Peaches, Dried Fruit, Pound Cake Cubes

Yield: 6 Servings (about 3 3/4 cups of dip)

BAKED SPINACH BITES W/SAUCE

INGREDIENTS:
<UL TYPE=SQUARE>2 10-ounce boxes of frozen spinach, thoroughly drained
2 cups of herbed bread crumbs
1 cups packed shredded Parmesan cheese
1/2 cup melted butter
4 small green onions, chopped
3 eggs
dash of nutmeg [/list]

DIRECTIONS:
Mix all ingredients together to form cocktail meatball
size spinach balls and freeze. before serving, place on
a baking sheet and bake at 350 degrees for 10-15 minutes.
Serve warm.

** SAUCE **
1/2 cup dijon mustard
1/2 cup honey
1 egg yolk

Mix honey and mustard, and then add egg yolk. Cook over
low heat, stirring constantly, until slightly thickened.
Cover and chill. Serve at room temperature or slightly
warmed.

Butterscotch Chocolate Chunk Cookies

1 package white cake mix
1 (3.5 ounce) package instant butterscotch pudding
2/3 cup rolled oats
1/2 cup vegetable oil
1/2 cup sour cream
1/4 cup water
1/2 tsp salt
2 tsp vanilla extract
1 cup semisweet chocolate chips
1/2 cup chopped pecans (if desired)

Preheat oven to 350 degrees. Lightly grease 2 cookie sheets.

In a large bowl, stir together cake mix, pudding, oats, and salt. Add oil, sour cream, water, and vanilla; mix until smooth and well blended. Stir in chocolate chips and pecans, if desired. Roll dough into 1 inch balls and place 2 inches apart on cookie sheets.

Bake for 8-10 minutes. Allow cookies to cool on baking sheet for 5 minutes, then transfer to wire baking rack. Cool completely.

Yield: About 2 dozen cookies.

STAINED GLASS TORTE

INGREDIENTS:
<UL TYPE=SQUARE>1 package lemon or orange jello
1 package lime jello
1 package cherry, raspberry, or strawberry jello [/list]

Filling:
<UL TYPE=SQUARE>1 package unflavored gelatin
1/4 cup cold water
1 cup hot pineapple juice
2 cups whipping cream
1/2 cup sugar
1 teaspoon vanilla [/list]

Crust:
<UL TYPE=SQUARE>2 dozen graham crackers
1/2 cup soft margarine
1/2 cup sugar [/list]

DIRECTIONS:
For Jello: Make the three kinds of jello, dissolving each
in 1 and 1/2 cups hot water. Set into separate square or
cake pans, for thin layer of jello and chill until firm,
or overnight.

For Crust: Crush graham crackers. Mix with butter and sugar.
Line a spring-form pan or pie dish with mixture. Set aside
some of the crumb mixture, this will later be used as a
topping. Place the graham crumb base in the fridge so that
it starts to harden.

For Filling: Soften unflavored gelatin in cold water; dissolve
in hot pineapple juice. Whip cream, adding sugar and vanilla
when almost whipped, while pineapple-gelatin mixture is cooling.
When cool, fold into whipped cream.

Cut flavored jello into small 1/2 inch cubes; fold into
filling. Pour into pan over crust and sprinkle with remaining
crust mixture. Chill six to eight hours or overnight.

YIELD: Approx 16 Servings

Garlic and Cheese Bruschetta

Ingredients:
<UL TYPE=SQUARE>1 cup fat free cream cheese
6 tablespoons nonfat sour cream
2 tablespoons fat-free mayonnaise
1 cup shredded reduced fat Swiss cheese
1/4 cup freshly grated Parmesan cheese
2 tablespoons minced parsley
1 tablespoon minced green onions
2 cloves garlic, peeled and minced
2 (1 pound) loaves French bread, cut diagonally in 1 inch slices
1/4 teaspoon ground black pepper[/list]

Preparation:
Preheat the broiler.
In a medium bowl, blend fat free cream cheese, nonfat sour cream and
fat-free mayonnaise with an electric mixer until smooth. Stir in 1/2
the reduced fat Swiss cheese, Parmesan cheese, parsley, green onions
and garlic. Arrange bread slices in a single layer on a medium baking
sheet. Lightly toast under the broiler. Remove from heat.
Spread French bread slices with the cream cheese mixture. Sprinkle
with remaining Swiss cheese. Broil under the preheated broiler
approximately 1 1/2 minutes, until cheese is melted. Remove from heat
and sprinkle with ground black pepper.

Italian Style Patties
Serves: Makes 12 patties

Ingredients:

1 1/2 teaspoons garlic powder

2 cups chopped stewed tomatoes
1/4 cup chopped fresh mushrooms
1/4 (2 ounce) can chopped black olives, drained
1 (8 ounce) package sliced pepperoni sausage
12 slices mozzarella cheese
1/2 cup shredded mozzarella cheese[/list]

Preparation:
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine the ground beef, ground pork, bread crumbs,
eggs, onion, green bell pepper, salt, ground black pepper, Italian-
style seasoning, sage, garlic powder, 1/2 cup pizza sauce and stewed
tomatoes. Mix well and form into 24 patties using a 1/4 cup measuring
cup OR an ice cream scoop.In a separate small bowl, combine the
mushrooms and olives and set aside. Arrange 12 patties on 2 ungreased
baking sheets. Place 4 slices of pepperoni on each patty, then a
small amount of the mushroom olive mixture, and then a slice of
mozzarella cheese. Top each patty off with another patty and pinch
the edges all around to seal everything into the middle. Finally, top
each with a drizzle of remaining pizza sauce and some shredded
mozzarella cheese.Bake at 375 degrees F (190 degrees C) for 30 to 40
minutes.

Tex Mex Chowder

Ingredients:

1 regular size can whole kernel corn, drained
1 regular size can diced tomatoes
1 can black beans, drained and rinsed
1 cup chicken broth[/list]

Preparation:
Combine all ingredients in a pot, bring to boil, simmer for 5 minutes.
Serve with sour cream and cheese.
Biscuits go well with it, too.

Yeast Raised Biscuits
Serves: Makes 15 servings.

Ingredients:
<UL TYPE=SQUARE>3/4 cup lukewarm water
2 yeast cakes (dry yeast won't work as well)
5 cups flour
2 T baking powder
1/3 cup sugar
1/2 T salt
1/2 tsp baking soda
3/4 cup shortening
3/4 cup buttermilk
3/4 cup milk[/list]

Preparation:
Dissolve yeast in water and set aside. Sift all dry ingredients
together.Cut shortening into dry ingredients. Mix yeast with the
milks. Add liquid mixture to the dry ingredients alternately until
you have a wet dough that can just barely be handled on a heavily
floured board. Knead slightly, roll, and pat. Cut into large biscuits
and let rise about 45 minutes to 1 hour 15 minutes, covered with a
cloth. Cook 10 minutes at 425F degrees. Reheat the leftovers at 350F
degrees for 3 to 5 minutes or in the microwave for 15-20 seconds.

Cream Cheese Corn

Ingredients:
<UL TYPE=SQUARE>3 pounds whole kernel corn, cooked
1/2 cup butter
1 (8 ounce) package cream cheese[/list]

Preparation:
Combine the corn, butter or margarine and the cream cheese in a
medium sized saucepan. Cook over medium heat for about 20 minutes.
Serve hot.

Chicken Hash
This recipe is a great way to use up leftover roasted
chicken. Serve over noodles or rice.

Serves: 4

Ingredients:
<UL TYPE=SQUARE>4 Tablespoons Butter
4 Tablespoons Flour
2 cups Chicken broth
1 Tablespoon Sherry
1/4 cup Cream
1 1/2 cups Chicken, cooked, diced
Salt and pepper to taste[/list]

Preparation:
Melt the butter in a large saucepan. Whisk in the flour and
cook for 3 minutes, stirring frequently. Whisk in the
broth, sherry and cream. Bring to a boil, reduce the heat
and simmer for 25 minutes. Add the cooked chicken and
simmer 10 minutes longer. Check the seasonings. Serve warm.

Spicy Southwestern-Style Mashed Potatoes
Serve this side dish with your favorite barbecue recipe.
Serves: 4

Ingredients:
<UL TYPE=SQUARE>4 large Potatoes, peeled and large diced
2 Tablespoons Butter
3/4 cup Milk
1 1/4 cups Pepper jack cheese, grated
2 Tablespoons Green onions, chopped
2 teaspoons Cilantro, chopped

Preparation:
Boil the potatoes until soft. Add to the bowl of a mixer.
Add the remaining ingredients. Start the mixer slowly.
Increase the speed until the mixture is smooth.

Beef And Sweet Potato Stew
The flavors of cumin and sweet potatoes put a new spin on
an old favorite.

Serves: 4-6

Ingredients:
<UL TYPE=SQUARE>2 teaspoons Olive oil
1 pound Stew meat, cubed
1 medium Onion, diced
2 stalks Celery, diced
1 teaspoon Garlic, minced
1 cup Mushrooms, quartered
1 Tablespoon Flour
2 cups Beef broth
2 cups Chicken broth
1 1/2 cups Sweet potatoes, large diced
2 1/2 teaspoon Cumin, ground
1 cup Tomatoes, diced
Salt and pepper to taste[/list]

Preparation:
Heat the oil in a large soup pot. Add the beef and brown.
Add the onions and celery. Cook until just soft. Add the
garlic and mushrooms. Cook for 2 minutes longer. Sprinkle
on the flour and cook for 3 minutes (stirring frequently).

Crawfish or Shrimp Chowder
Serves: 4-6

Ingredients:
<UL TYPE=SQUARE>3 slices ham or uncooked bacon
1 1/2 tablespoons butter or margarine
1 small onion, chopped very fine
2 tablespoons bell pepper, chopped very fine
2 tablespoons celery, chopped very fine
2 cups peeled diced raw potatoes
1 1/2 cups fish or shrimp stock
2 cups heavy cream
1 pound cooked crawfish tails or 1 -1/2 pounds raw shelled cooked
shrimp [/list]

Preparation:
If using ham, spray large frying pan with Pam. If using uncooked
bacon, use cold frying pan. Remove from pan and either crumble or
chop. Retain bacon fat. If using ham, add butter or margarine to pan
and add onions, bell peppers and celery. Saute until wilted. Add
stock and potatoes, (if shrimp are used add shrimp), and meat. Cook
until potatoes are tender. Add crawfish.About 10 minutes before
serving add cream and seasoning. Cook over a low fire until flavors
come together. Do not let cream curdle. Just before serving add 1/2
teaspoon butter, a dash of cayenne and a dash of fresh pinched
parsley.

Crock Pot Taco Soup
Serves: 4 to 8 servings

Ingredients:
<UL TYPE=SQUARE>1- 2 pounds ground beef
1 onion, chopped
2 cans pinto beans
2 cans Rotel - the chopped kind
1 can whole kernel corn
1 package dry taco seasoning
1 package dry ranch dressing mix
grated cheese
Tostitos or other corn chips[/list]

Preparation:
In crock pot or other slow cooker, place beans, corn, Rotel, and
hominy (juice from cans, also). Add taco seasoning and dressing mix,
and stir well to mix.In a frying pan, cook meat and onions until meat
is cooked, then add to the crock pot and stir to mix. Add water until
the pot is full. Cook on high at least three hours. The longer you
cook this soup, the better it gets - and it's even better the second
day. It keeps great in the icebox for two or three days, covered.
To serve, place soup in bowls and top with the grated cheese; eat with
the corn chips.You can also cook this on the top of the stove in a
pot or even in a pressure cooker, but it's a great soup to put on in
the afternoon and have a quick supper later that evening.

Ground Beef & Vegetable Casserole
Serves: 4 or 5

Ingredients:
<UL TYPE=SQUARE>2 lg. potatoes, sliced
2 to 3 med. carrots, sliced
1 can of peas, well drained
3 med. onions
1 1/2 lbs. ground beef, browned
2 stalks of celery, sliced
1 can of cream of tomato soup
1 soup can water[/list]

Preparation:
Place layers of the vegetables in the order given in crock pot.
Season each layer with salt and pepper. Put the lightly browned
ground beef on top of the celery. Mix the tomato soup with the
water and pour over the layers. Cover and set on low for
6 to 8 hours, stirring occasionally.

Popcorn Fruit Cookies
Serves: 30

Ingredients:
<UL TYPE=SQUARE>1 c Finely ground popped corn
1 c Sugar
1 c Finely cut dried fruit, any -kind
1/2 c Melted shortening
1/4 c Sweetened condensed milk
1/4 c Water
1 Egg, well beaten
1 c Flour
1 c Corn-meal
1 ts Salt
1 1/2 ts Nutmeg
4 ts Baking powder[/list]

Preparation:
Sift flour, measure, and sift with baking powder,
nutmeg, salt, and corn-meal. Combine shortening
sugar. Add egg. Add milk and water. Mix thoroughly.
Add flour mixture, popped corn, and dried fruit. Mix
thoroughly. Turn onto lightly floured board. Roll in
sheet 1/3 inch thick. Cut with floured cutter. Place
on slightly oiled baking sheet. Bake in hot oven (425F) 10-12
minutes.

Tomato and Basil Salad

Ingredients:
<UL TYPE=SQUARE>1/2 loaf sourdough bread
3/4 C. chicken or beef stock
4 ripe tomatoes, cubed
1 cucumber, halved and sliced
2 green onions, sliced
1/4 C. roasted red peppers, drained and diced
4 T. light olive oil
4 T. red wine vinegar
1/2 tsp. salt
Pepper to taste
10 basil leaves, thinly sliced
Fresh lettuce leaves[/list]

Preparation:
Cut the crusts off the bread before cutting into 1-inch cubes.
Place the cubes in a large salad bowl with the tomatoes,
cucumber, green onion and roasted peppers. Pour the stock
over this mixture and toss well. Whisk the oil, vinegar, salt and
pepper together in a glass measuring cup. Pour the dressing
over the bread mixture and toss gently. Finish by scattering the
thinly sliced basil over the top. Serve immediately or chill for
up to 30 minutes.

Fudge Puddles from Country Woman Magazine
Serves: Makes 48 balls

Ingredients:
<UL TYPE=SQUARE>1/2 C. butter or margarine, softened
1/2 C. creamy peanut butter
1/2 C. sugar
1/2 C. packed light brown sugar
1 egg
1/2 tsp. vanilla extract
1 1/4 C. flour
3/4 tsp. baking soda
1/2 tsp. salt [/list]

Fudge Filling:
<UL TYPE=SQUARE>1 C. (6 oz.) milk chocolate chips
1 C. (6 oz.) semisweet chocolate chips
1 can sweetened condensed milk
1 tsp. vanilla extract
Chopped peanuts [/list]

Preparation:
In mixing bowl, cream butter, peanut butter and sugars, then
add egg and vanilla. Stir together flour, baking soda and salt,
then add dry ingredients to creamed mixture. Mix well. Chill for
1 hour.

Shape into 48 balls, 1 inch each. Place in lightly greased
mini-muffin tins. Bake at 325°F for 14 to 16 minutes or until
lightly browned. Remove from oven, and immediately make
"wells" in center of each by lightly pressing with a melon baller.
Cool in pans for 5 minutes, then carefully remove to wire racks.

For filling, melt chocolate chips in double boiler over
simmering water. Stir in milk and vanilla; mix well. Using a
small pitcher or pastry bag, fill each shell with filling. Sprinkle
with peanuts. (Leftover filling can be stored in refrigerator and
served over ice cream.)

Stuffed Peppers with Creole Sauce
Serves: Makes 6

Ingredients:
<UL TYPE=SQUARE>6 large green bell peppers
1 1/2 lb. lean ground beef
1/4 C. finely chopped onion
1/2 C. chopped celery
1/2 C. chopped green pepper
1/2 tsp. salt
2 C. cooked rice (2/3 C. uncooked)[/list]

Creole Sauce:
<UL TYPE=SQUARE>2 C. undrained tomatoes
1/4 C. chopped onion
1/2 tsp. salt
1 T. sugar (optional)
1 tsp. leaf basil
1 T. flour
1/4 C. water[/list]

Preparation:
Cut tops, membranes and seeds from peppers. Cover
peppers with boiling water. Cook, uncovered, for 10 minutes;
drain and set aside.

Brown ground beef and drain. Add onion, celery and green
onion to beef; cook to lightly brown. Add salt and cooked rice;
mix well. Spoon mixture into pepper. Place peppers in baking
dish and cover with Creole Sauce. Bake, covered, at 350ºF
for 45 minutes. Uncover and bake 15 minutes more.

To make Creole Sauce: Combine tomatoes, onion, salt,
sugar and basil in skillet. Simmer for 10 minutes. Combine
flour and water; add to mixture and cook until thickened.
Pour over peppers.

Apple Stuffed Chicken Breasts
Serves: 4

Ingredients:
<UL TYPE=SQUARE>4 boneless chicken breasts
3 slices bacon, chopped
2 cloves garlic, minced
3 scallions, finely chopped
1 apple, peeled and chopped
Pepper to taste
Salt to taste
1/2 tsp. thyme
1/3 C. Parmesan cheese
2 T. olive oil[/list]

Preparation:
Cut a small pocket into the thickest part of each chicken
breast and set aside.Fry bacon until crisp. Drain on a paper
towel. Add garlic and scallions to the bacon drippings; sauté
slightly. Add apple, pepper, salt and thyme and return the
bacon bits to pan. Heat thoroughly. Remove from heat and cool.
When mixture is cool, add cheese and stuff into chicken
breast. Brown chicken on both sides in a very hot fry pan with
olive oil. When brown on both sides, place in a baking dish
and bake at 350°F for 15 to 20 minutes or until chicken is done.

Sweet Potato Soufflé

Ingredients:
<UL TYPE=SQUARE>4 medium-sized sweet potatoes
1/2 stick butter
3 eggs
1 cup sugar
1 cup evaporated milk
1 tablespoon lemon juice
1 teaspoon vanilla
1 teaspoon pumpkin pie spice [/list]

Topping:
<UL TYPE=SQUARE>1 cup chopped pecans
1/4 cup brown sugar
1/4 cup melted butter [/list]

Preparation:
Boil sweet potatoes; peel and mash. Add butter, eggs, sugar,
evaporated milk, lemon juice, vanilla and pumpkin pie spice. Place in
a greased casserole and bake at 375 degrees until firm. Top with
topping and return to oven until brown. Mix topping ingredients
together. Place on top of casserole

Mississippi Mud Cake

Ingredients:
<UL TYPE=SQUARE>3/4 cup margarine
1/2 cup heavy cream
1/2 cup brewed coffee
4 eggs
1 1/2 cups sugar
1/2 cup cocoa
1 3/4 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
4 bars 1.2 oz each, milk chocolate candy bars, for frosting [/list]

Preparation:
Let margarine, cream, coffee, and eggs warm to room temperature for
easy mixing. (Margarine should be very soft) Grease and flour an
oblong baking pan.Preheat oven to 350 degrees.Combine room-
temperature ingredients with remaining ingredients, except candy
bars, in a large bowl. Beat at medium speed with electric mixer
for 1 minute, scraping side of bowl with plastic spatula. Pour into
prepared pan. Bake at 350 degrees for 50 minutes, or until center
springs back when lightly pressed with fingertip. Place on wire rack.
Break chocolate bars into pieces; place on hot cake; let stand 1
minute; then spread softened chocolate with spatula to frost cake.
Cool before serving.

French Canadian Meat Pie

Ingredients:
<UL TYPE=SQUARE>1 onion, finely chopped
1 lb. ground beef
1 lb. ground pork
1 grated raw potato
Salt and pepper, to taste
1 tsp. allspice
Pastry for a two-crust, 9-inch pie
1 T. vegetable oil[/list]

Preparation:
Preheat oven to 400ºF.In a skillet, sauté onion in oil until soft.
Add the meats, potato and a little water and simmer until the meat
is lightly browned and onions and potatoes are soft. Stir in allspice
and salt and pepper to taste. Fill pastry-lined pie dish with the
mixture and cover with top crust. Slash the top crust in three or
four places to allow steam to escape. Bake for 10 minutes.
Reduce heat to 375ºF and bake for another 40 minutes, or
until crust is lightly browned.

Cream Cheese Frosting
Serves: Makes 2 cups

Ingredients:

8 ounces cream cheese
4 cups confectioners' sugar

Classy Apricot Salad

<UL TYPE=SQUARE>1 cup fresh apricots, halved and quartered
1 cup pineapple chunks, fresh or canned
2 oranges, peeled and cut into bite-sized pieces
1 pint sour cream[/list]

Combine all ingredients and gently stir to blend thoroughly.
Cover and chill in refrigerator 24 hours or more. Spoon into
sherbert glasses or into chilled lettuce cups. Serves 4-6.

Irish Crème Chocolates

<UL TYPE=SQUARE>12 oz package semisweet chocolate chips
1/2 cup Bailey's Irish Crème
1/4 cup whipping cream
2 cups pecans[/list]

Stirring constantly, heat chocolate, Irish cream liqueur
and whipping cream in a double boiler over medium heat
until chocolate is melted and mixture is smooth. Remove
from heat and stir in pecans.
Drop by teaspoonfuls onto wax paper; cool until set, about 1
hour. Remove from wax paper and store in airtight container.
Makes 20-24 candies.

HOT DEVIL DOGS

<UL TYPE=SQUARE>1 can (28 oz) baked beans
1/4 cup apricot preserves
1 tbsp apple cider vinegar
1/2 tsp hot pepper sauce (Tabasco)
1 pkg (16 oz) hotdogs, cut into 1 inch pieces
1/4 tsp salt
1 pkg hotdog buns[/list]

In a large saucepan over medium heat, combine baked beans,
apricot preserves, apple cider vinegar, hot pepper sauce, hot
dogs and salt. Bring to a boil, reduce heat and simmer for 6
minutes, or until thoroughly heated. Serve warm on hot dog
buns. Serves 12.

Sour Cream Soufflé

<UL TYPE=SQUARE>6 large egg yolks
1/2 cup sour cream mixed with 1/4 cup grated Parmesan cheese
1/4 tsp salt
6 stiff-beaten egg whites
3 tbsp butter (NOT margarine)
1/2 cup sour cream sweetened with 1 tsp sugar or to taste
Fresh berries of your choice[/list]

Beat egg yolks till thick and lemon-colored, about 5 minutes;
beat in 1/2 cup of sour cream/parmesan cheese mixture and
salt. Fold in egg whites. Melt butter in a 10" heavy, oven-going
skillet; pour in egg mixture, leveling gently. Cook over very low
heat 10 minutes. Carefully move to 325 degree oven and bake
for 15 minutes until golden and puffed. Cut into 4 wedges and
serve with a dollop of the sweetened sour cream and top with
berries. Serves 4.

Maple-Sweetened Corn Muffins
Serves: Makes 12 muffins

Ingredients:
<UL TYPE=SQUARE>1/3 cup butter
3 tablespoons maple syrup
1 cup cornmeal
1/2 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
2/3 cup milk[/list]

Preparation:
Preheat oven to 425 degrees. Grease 12 muffin tins. Melt the butter
with the maple syrup and set the mixture aside to cool. In a bowl,
combine the cornmeal, flour, baking powder and salt. In another bowl,
beat the egg and milk together until well blended. Pour the melted
butter mixture and egg mixture into the bowl with the dry
ingredients. Stir to combine. Spoon equal amounts of the batter into
the muffin tins. Bake for 20 to 25 minutes or until muffins are
puffed and golden brown.

Fabulous Teriyaki Fish
Serves: Makes 4 servings.

Ingredients:
<UL TYPE=SQUARE>1 can (20 oz.) pineapple chunks in juice
1 clove garlic (pressed)
1/2 tsp ground ginger
1 Tbls minced green onion
5 tsp teriyaki sauce
1 tsp white vinegar
1 pound fish fillets
2 tsp cornstarch
1 tsp vegetable oil[/list]

Preparation:
Measure 2 Tbls juice from pineapple can; mix garlic,
ginger, onion, 3 tsp teriyaki sauce and vinegar. Arrange
fish in shallow pan; pour marinade over fish. Refrigerate 10
minutes. Arrange fish on greased boiler rack. Brush with
marinade. Broil 6 inches from heat 5 to 6 minutes. In saucepan,
combine remaining 2 tsp teriyaki sauce, undrained pinapple
and remaining ingredients. Cook until sauce boils and thickens.
Serve with fish.

Hoagie Bake
Serves: 8

Ingredients:
<UL TYPE=SQUARE>2 (8 ounce) packages refrigerated crescent rolls
1/4 pound salami
1/4 pound cooked ham
1/4 pound pepperoni sausage
8 slices Provolone cheese
8 slices Swiss cheese
3 eggs, beaten
2 tablespoons grated Parmesan cheese[/list]

Preparation:
Preheat oven to 350 degrees F (175 degrees C). Cover bottom of a 9x13
inch baking dish with 1 package crescent rolls. Layer salami, ham and
pepperoni. Cover meat with a layer of Provolone cheese and Swiss
cheese. Spread 1/2 of the beaten eggs over the cheese. Top with
second package of crescent rolls. Brush with remaining beaten eggs
and sprinkle with Parmesan cheese. Bake uncovered in the preheated
oven for 25 minutes. Cover with foil, and bake for another 10 minutes.

Ham and Cheese Roll Up

Ingredients:
<UL TYPE=SQUARE>1/2 pound boiled ham
1 package crescent rolls
6 slices American Cheese
1/2 cup each, diced onion, diced green pepper
Salt, pepper, oregano[/list]

Preparation:
On a cookie sheet, spread out the crescent dough, press together (or
use rolling pin) to close dough seams. Place layer of boiled ham over
dough. Place cheese slices over the ham. In a skillet cook the onion,
green pepper, and seasonings (season to taste), for about 3-4
minutes. Spread the skillet mixture over the cheese. Roll up the
dough with ingredients inside length-wise, pinching the dough
together at the seams and edges to form a closed roll. Bake at 400
degrees for 20-25 minutes.

WINE-MARINATED GRAPES
Serves: 6-8

Ingredients:
<UL TYPE=SQUARE>1 750-ml bottle dry white wine (such as Fumé Blanc)
1/4 c plus 3 T sugar
2 pounds red and/or green seedless grapes, cut into small
clusters
1 T grated lemon peel[/list]

Preparation:
Pour wine into large nonaluminum bowl. Add 1/4 cup sugar and
stir until dissolved. Add grapes (peel, if you have the
patience); mix gently. Cover; chill at least 3 hours and up
to 1 day. Using slotted spoon, transfer grapes to shallow bowl.
Sprinkle grapes with remaining 3 tablespoons sugar and serve.

FRESH GRAPE SALSA
Serves: Makes about 2 cups

Ingredients:
<UL TYPE=SQUARE>2 c coarsely chopped California seedless grapes
1/2 c each chopped green onions and diced fresh or canned
Anaheim chilies
2 T chopped cilantro
2 T vinegar
1 clove garlic, minced
1/2 t salt
1/8 t bottled hot pepper seasoning[/list]

Preparation:
Combine all ingredients in medium bowl; mix well. Let stand
at least 1 hour before serving. Drain off excess liquid
before serving.

Asian-Style Cherry Buns
Serves: 20

Ingredients:
<UL TYPE=SQUARE>16 oz package hot roll mix
1/2 cup Ground turkey
1/2 cup Chopped onion
1TBLSPN Vegetable oil
1 cup Chopped Northwest fresh sweet cherries
1/2 cup Chopped water chestnuts
2 TBLSPNS Each soy sauce and packed brown sugar
1 t Worcestershire sauce
1/2 t Each garlic salt, ground ginger and cornstarch
2 TBLSPN Honey
1 TBLSPN Lemon juice [/list]

Preparation:
Prepare hot roll dough according to package directions.
Stir-fry turkey and onion in oil until turkey is browned and onion
softened; stir in cherries, water chestnuts, soy sauce, sugar,
Worcestershire sauce, garlic salt, ginger and cornstarch.
Remove from heat and cool to room temperature.
Cut dough into 20 pieces. Flatten into 4-inch rounds.
Place 1 tablespoon filling in center of each; gather edges and seal.
Place sealed-side down on greased baking sheet.
Bake at 350F 12 to 15 minutes or until golden brown.
Combine honey and lemon juice; brush on hot rolls.

BASIL CHICKEN
Serves: 4

Ingredients:
<UL TYPE=SQUARE>1 pound boneless skinless chicken breast
1 green bell pepper, seeded and sliced
1 tablespoon fish sauce
2 tablespoons fresh basil, sliced
1 jalapeno pepper, seeded
2 cloves garlic
1 onion, sliced
1 red bell pepper, seeded and sliced
1 tablespoon oil[/list]

Preparation:
Heat wok, add tablespoon oil and chicken. Stir-fry until
chicken is almost done. Puree 2 slices onion, 2 slices bell
peppers, 2 cloves garlic, jalapeno, 1 tablespoon oil in
blender or food processor. Add pureed mixture from food
processor to wok. Stir for one minute. Add rest of peppers
and onions. Stir-fry two minutes. Add rest of ingredients
and stir-fry one minute. Soy sauce or small amount of salt
can be substituted for fish sauce. Serve over steamed rice.

POTATO & PARSNIP CASSEROLE

INGREDIENTS:
<UL TYPE=SQUARE>1/2 lb. parsnips, peeled and chopped
1/2 lb. baking potatoes, peeled and chopped
1/4 cup shredded Swiss cheese
1 Tbs. grated Parmesan cheese
2 Tbs. milk
2 tsp. butter, softened
2 Tbs. freshly chopped parsley[/list]

DIRECTIONS:
Preheat oven to 375 degrees. Place parsnips and potatoes
in a steamer basket over boiling water. Cover saucepan and
steam 10-12 minutes or until tender. Drain and return
vegetables to pan. Mash well. Stir in next 5 ingredients.
Season with salt and pepper to taste. Pour mixture into a
buttered baking dish. Bake 20 minutes until mixture is bubbly.

COBBLESTONE BREAKFAST BREAD

INGREDIENTS:
<UL TYPE=SQUARE>1/4 cup dried cranberries
1/4 cup raisins
2 teaspoons orange zest
1/3 cup sugar
4 teaspoons ground cinnamon
4 packages refrigerated dinner rolls
4 tablespoons buter, melted[/list]

Glaze:
<UL TYPE=SQUARE>1/3 cup powdered sugar
2-3 teaspoons milk[/list]

DIRECTIONS:
Preheat oven to 350 degrees. For bread, combine cranberries,
raisins and orange zest in a small bowl; mix lightly. In a
small mixing bowl combine sugar and cinnamon. Unroll dough
and separate into 16 rolls. Cut each roll into quarters. In
a large bowl place half of the dough pieces and half of the
butter. Toss gently. Sprinkle with half of the sugar mixture
and toss to evenly coat. Place dough pieces in a loaf pan to
cover bottom of pan. Sprinkle half of the berry mixture over
dough. Repeat layers. Bake 40-45 minutes or until golden
brown. Cool in pan 15 minutes. Loosen bread from edges of
pan and remove to a cooling rack. Prepare glaze by combining
powdered sugar and milk in a small bowl. Drizzle glaze over
warm loaf.

Yield: 12 Servings, 1 loaf
