If a recipe calls for 1 cup self-rising flour, you may substitute
1 cup all-purpose flour plus 1 1/2 tablespoons baking powder

One of the best remedies for an insect bite is a Rolaid.
Crush it, mix it with a little water to make a paste, put it
on the bite, and within a few seconds the itch is gone.

You can save time marinating chicken, steak, etc. by simply placing
the meat in a freezer bag, pour in your favorite marinating item and
toss in the freezer. The meat is already seasoned by the time it's
thawed out and no dishes dirtied.

For those of you who prefer a thicker soup, try adding a vegetable or
rice puree to your soup to act as a thickening agent and flavor
enhancer. Just add cooked rice or vegetables to a food processor with
a little broth and puree until smooth. Add the puree to your soup and
continue to cook until soup has thickened. Cooked potatoes will also
work as a thickener when pureed.

You can achieve a lighter batter when preparing foods by
using liquids with carbonation instead of the water or milk
in many recipes. Beer is great for full-flavored foods

About the above post - I'm not sure about this one.

I had to make an emergency trip to the laundry room to fluff/dewrinkle my working clothes. I inadvertantly dried a load of used laundry, as well... I couldn't tell when I got back home with the clothes which was the basket my horrified little cats said were "dirty!!!"

When we first moved into this apartment 6 years ago, I had literally boxes of Carpet Fresh-type carpet deodorizers left and now no carpet to use it on.

One day, my Mom called to say she was coming over. It had been raining heavily for days, and since we're both rather heavy smokers, there was a most uninviting odour in the air. I took one of those boxes of deodorizer, had the girls quickly take out the trash and put new liners in, and I sprinkled the deodorizer in the bottoms of the liners... Since almost every room in our house has it's own trash can, the house smelt better immediately!

He's coming over and you forgot to decorate those boxes or hide them? Buy a roll of contact shelf paper (lots of designs available), place one end of the roll under the edge of the bottom box, and roll up and over... jam the rest of the roll between the top box and the wall.

After his visit, you can now use the contact paper to actually cover your boxes...

You've used ammonia and vinegar to thoroughly clean your house... but the odour is really unbecoming. Take a little potpourri and set it to simmer in water on one of your more unused burners in the kitchen. Spritz a spray deodorant or cologne in each of the other rooms, or sprinkle powdered deodorizer or detergent in the trash cans in each room. No trash can in this room? Sprinkle it under the bed/sofa/chest/desk or behind the door where it won't be seen.

For a noodle dish, add 1 1/2 cups of water and a cup of macaroni or other similar noodles. For potato dishes, the rice usually works well, or you can throw a can of green beans and a can of corn on the other burners to pad out your usual one-dish meal...

You really like Hamburger Helper, but the price is skyrocketing like crazy... Stock up on the grocery store packets of seasoning (spaghetti sauce, turkey gravy, beef stew mix, pot roast, mushroom gravy...) and buy bulk bags of rice and macaroni.

Brown your beef or chicken as usual.
Add one seasoning packet to one cup of water and whisk quickly with a fork to break up the lumps. Add to the meat pot, with another cup of water, and bring to a boil. Add one cup of noodles or rice, and when it reaches a boil again, reduce heat by half and simmer til it's ready.

Another alternative is to prepare your rice/noodles separately, and add the meat/sauce mix afterwards...

Hungry, and all you have is a box of mac&cheese and some canned stuff? No prob...

Brown some ground beef sprinkled with your favourite seasoning (salt&pepper, Italian seasoning, steak seasoning, Mrs. Dash, etc...)

Add 2 cups of water and the macaroni, bring to a boil, reduce heat by half, and cook til macaroni is done.

Whisk the powdered cheese sauce with 1/2 cup of water or milk, add in one can of cream of mushroom (cream of chicken, cream of celery, etc.) soup, and add to meat/noodle pot. Drain and add your favourite canned veggie (unless your fave is pork&beans or ranch style beans... don't drain those completely...)

Heat thoroughly, stirring to smooth out the sauce. Serve hot...

Sprinkle a combination of salt and cinnamon on any spillovers that occur while baking. Not only does it prevent the burnt smokey smell from filling the house, but you should also be able to use a spatula to lift the whole piece after the oven cools.

CLEANING PRODUCT ALTERNATIVES

General purpose cleaners - Borax is low-toxic. Mix 2 teaspoons borax, 1 teaspoon soap and 1 litre water. Use in spray bottle.


Heavy duty cleaners - 4 litres hot water, 1/4 cup cloudy ammonia and 1 teaspoon bi-carb soda. Double ingredients except water for a stronger mixture.


Drain cleaners - 1/2 cup white vinegar followed by 1 handful baking soda. Cover drain. Also try plunger or metal snake.


Oven cleaners - For a fresh spill, wet and sprinkle with baking soda and scrub with soft nylon scrubber. For normal cleaning, make a paste of bi-carb soda and water and apply to the inside of a warmed oven. Leave to dry. Clean off with a brush or scourer and hot water.


Pot and pan cleaners - Borax with hot water.


Wall and floor cleaners - Borax with hot water.


Glass cleaner - Mix vinegar and water. (Also try methylated spirits and water applied with newspaper.)


Toilet bowl cleaners - Use vinegar and leave to soak for 10 minutes. Lime scale can then be scrubbed off.


Bath and tile cleaners - Mix borax and vegetable soap with hot water.


Chlorine bleach - Use dry bleach, borax or soda to whiten.


Furniture polish - 1 teaspoon olive oil with juice from one lemon and 1 teaspoon water. Or use mayonnaise.


Silver polish - Soak 5-10 minutes in 1 litre warm water, 1 teaspoon baking soda, 1 teaspoon salt and a small piece of aluminium foil. Wipe with a soft cloth.


Spot removers - Immerse in cold water and liquid soap.


Moth balls - Cedar chips, dried lavender, pepper corns. Store woollens in zipped plastic bags.


Rug cleaners - Rub lots of salt immediately on red wine spills, make a solution of borax and water, or use soap based non aerosol rug shampoos. (Use home made laundry detergent.)


Air fresheners - Ventilate. Open boxes of baking soda. Simmer cloves and cinnamon in boiling water.


Pesticides:

ANTS: Sprinkle cream of tartar, red chilli powder or dried peppermint where they enter.

COCKROACHES & SILVERFISH: equal parts baking soda and powdered sugar.

FLEAS: Use flea combs or herbal flea powders. Vacuum house thoroughly. Refer to the rec.pets.* FAQ on the subject.
FLIES: Stick cloves in an orange.

SUMMER BITING INSECTS: Rub vinegar on skin.
Or you could try a drop or two of citronella oil diluted in a tablespoon or two of rubbing alcohol, then dabbed on the skin.

When you can afford it, but some good rubbermaid type storage
containers for your leftovers. This is a long term investment,
so buy the best your can.

Until then, a simple alternative is covering your food with
plastic shower caps. If you are going to use a saran type
plastic wrap, keep in the refrigerator so it will roll out
smoothly and you will not waste any of the plastic wrap.

TURN OLD BREAD INTO NEW CROUTONS

Take all those leftover slices of bread that get
abandoned and transform them into something new
and delicious - like croutons for your salad.

--Take the bread and slice it into bite-sized cubes.
--Put them into a shallow baking pan with a little bit
of oil or butter.
--Bake at 300 degrees for 20 to 25 minutes, stirring once.
--Remove from oven and sprinkle with Parmesan cheese.

A quick way to wake up the flavor of dried herbs is to
briefly soak them in a little dry white wine before using.
The acidity helps re-release the flavor. Always measure the
dried herb before re-hydrating. A few minutes of soaking
are all that is necessary. Do not revive more herbs than
you will use immediately as they will not store well.

accurate test for doneness is a meat thermometer. Since chicken
is never ready to be served unless it is done, always be sure it
is completely cooked. Whole or bone-in chicken should reach
an internal temperature of 180°F, and boneless chicken should be

Improper slicing can ruin a beautiful homemade or bakery
loaf of bread. Slice fresh bread using a knife with a
serrated blade. For best results remember to use a "sawing"
motion and press downward as little as possible. Let the
knife do the work! Keep the top of the knife perpendicular

Reheating Baked Potatoes

When cooking carrots don't peel the carrots. Wash them
and cook with the peels on, in salted boiling water. Once
they are soft enough to pierce with a fork, plunge them
into cool water. The peels will rub right off, leaving behind

To cook odorless cauliflower, tear a slice of bread into

rub vigorously with a kitchen towel over the side and bottom

Who HASN'T scorched rice? To remove the smoky, unpleasant
taste from scorched rice, scoop the rice into a clean pot, being
careful not to scrape in any of the crusty bottom at the same time.
Place a single layer of onion skins on top of the rice. Cover the
pot and let it sit for 10 to 15 minutes. The onion skins will remove
the acrid taste from the rice. Discard the onion skins and serve.

For fast cookie making, and easy clean up, line cookie sheet, the kind
with sides, with paper grocery bag cut a little larger than pan, press cookie
dough to fill, bake, remove, place plastic wrap over top, flip over, remove
cookie sheet, flip back over, let cool on paper bag, when cool slice with pizza
cutter to desired size and watch the kids drool.

SELECTING PEPPERS:

Choose peppers that feel heavy for their size; they will
have thick, meaty walls. Avoid anything with soft spots or
shriveled areas. Bell peppers should be firm and shiny.
You can keep peppers in a plastic bag in the refrigerator
for up to 1 week.

Ever feel awkward when it comes time to slice or stuff
these puppies? Here's the scoop on getting the most out
of your produce.

If stuffing or slicing, ribs and seeds should be removed.
To keep peppers whole for stuffing, cut about 1/4 to 1/2
inch off top and scoop out or trim away seeds and white
ribs. If peppers will be sliced, cut them in half, then
trim away stem, seeds and ribs.

Blanching Almonds

The dark skin on whole almonds can sometimes add a bitter
flavor. They also may make an undesirable visual
presentation in some recipes. Simply add the almonds to a
saucepan and cover with water. Bring to a boil, drain, and
shock with cold water. Squeeze the almonds and most skins
will come right off. Place the nuts on a cookie sheet at
350 for 5 minutes to crisp them back up.

Quicker Baked Potato

Try this method for speeding up the potato baking process
(for a better texture than those that you microwave).
Pre-heat the oven to 400. Place the potato in boiling water
for 10 minutes. Bake for 30 minutes. This will cut the

KEEPING THOSE KNIVES SHARP!

Sharpening steel at a comfortable angle and with a relaxed grip.
Start with the knife in the vertical position, lightly touching
the steel at a 20 degree angle to the knife. Keeping your arm
still and using a smooth wrist action, pass the blade along the
length of the steel. Note that the completed action is basically
an arc. Place the blade on the opposite side of the steel and
repeat the sharpening motion. Repeat the above steps 3-4 times
to sufficiently realign the edge of the blade.

Add a teaspoon of vanilla to whipped topping -- either the
frozen-in-a-tub variety, or the boxed mix kind. If you're
using the frozen in-a-tub kind, dump it into a mixing bowl,
add the teaspoon of vanilla (preferably Mexican vanilla)
and whip it for a minute. Leave the topping in your own
mixing bowl. Everyone will think it´s fresh whipped cream!

individually:

Spread them on cookie sheets, not touching, and freeze.
Then transfer quickly to self-sealing plastic bags and

pesky mosquitoes.....Put some water in a white dinner
plate and add just a couple of drops of Lemon Fresh Joy
dishwashing soap. Set the dish on a porch or patio.
The mosquitoes flock to it, and drop dead, or fall into
the water, or on the floor within about 10 ft.

Did You Know? If you buy cheese in 1-pound blocks or chunks, cut it
into fourths to use one part at a time. You'll always have the same
amount (1 cup) available anytime for cooking, snacking or an
appetizer tray. And, if 1/2 cup of shredded cheese is needed, you

Drying Lettuce

Lettuce should always be washed before serving. But damp
lettuce is undesirable in salads because it dilutes the
dressing and makes for a soggy finish. A quick salad
spinner can be improvised with materials you probably have
in your home. Line a plastic grocery-style bag with paper
towels. Add the damp washed lettuce. Spin the bag (sort of
like a lariat) to dry the leaves. This procedure works as
well as the expensive salad spinners.

Citrus Salt

Before making fresh lemonade or orange juice, remove the
zest (the outer rind) from the fruit using a grater. Avoid
scraping off any of the white pith. Toss the zest with a
small amount of kosher salt. Allow it to sit for at least
three days. Use it to season foods like chicken, fish, or
vegetables. Besides adding the seasoning of salt, the
mixture will add a pleasing citrus edge to your foods.

Canned Food Safety

It is a good idea to do a periodic examination of your
pantry. Remember that most canned goods only last for one
year. Check the expiration dates on each container. Discard
any cans that have dents or rust. Above all, throw out any
cans that are bulging (this can be a sign of botulism,
which can be fatal). Always rinse the tops of any can that

Use two small coolers -- one for fruit and beverages, which
will be opened frequently, and one for such perishables as
meats, poultry, salads, sandwiches, and cheese.

Chill food thoroughly in the refrigerator or freezer
before placing in cooler -- the cooler cannot chill foods
that aren't already cold.

Use store-bought ice packs, or make your own: Freeze juice
boxes, or fill milk cartons or plastic bottles with water
(leave 1-inch headroom at top to prevent bursting; fold
carton over to close, or place cap on bottle before freezing).
Pack perishables right next to ice packs. Keep fruits and
delicate veggies like lettuce away from ice to prevent
bruising and "freezer burn."

Fill cooler to the top (if necessary, add ice cubes or
other cold nonperishables to fill space) -- a full cooler
keeps food cold longer than a partially filled one.

Parchment paper, or even a paper grocery bag, makes baking cookies a
dream. Cut two pieces of paper, or bag, the width of the cookie sheet
but a little longer in length. Place cookie dough on paper, slide onto
cookie sheet and bake. While first batch is baking put next batch on
a second piece of paper. When first batch is done simply slide paper
off and slip next one in. Allow first batch to cool slightly, remove
to cooling rack and fill paper for third batch...Then grab one or two
from first batch and enjoy. The first batch never seems to make it
to the cookie jar...

Pressure will force air up and out of the bag. When
the bag has collapsed, seal it and place it in the

Salted and unsalted butter can be used interchangeably in cooking or
baking. However, if a recipe calls for unsalted butter and you use
salted butter, reduce the salt called for in the dish or baked good.
There’s about 3/8 teaspoon of salt in every stick of butter.
Use unsalted butter to grease pans. Salted butter may cause baked

PACKING THE COOLERS

It's a good idea to use a separate cooler for drinks, so the
one containing perishable food won't be constantly opened and
closed.

Pack coolers inside the air-conditioned car instead of the
trunk whenever possible.

Pack foods in the cooler in the order opposite of how you'll
be using them. In other words, pack the food you'll need last
at the bottom and so on.

KITTY HEAVEN (Sardines & Rice)

<UL TYPE=SQUARE>2 Flat cans of sardines in oil
2/3 c Cooked rice
1 tb Liver
1/4 c Parsley, chopped[/list]

Combine all ingredients. Stir with a wooden spoon to break
up sardines into bite-sized pieces. Yields: 2 - 3 servings.

A Word about Sauces

Sauces--rich and thick, savory or sweet, add delicious flavors to
almost any grilled fare. Use a premium sauce of your choice and
capture real homemade taste. Serve warmed sauce on the side for added
zest. Here's how to protect the rich, deep color and spicy flavor of
barbecue sauce, especially tomato and molasses based ones that can
burn if applied too early.

For grilled steaks and chops:
Baste with sauce after meat has been turned for the last time. About
the last 3 minutes of grilling.

For grilled chicken:
Baste with sauce the last 10 minutes of grilling. Turn once.

For hot dogs and sausage:
Baste with sauce the last 5 or 6 minutes. turning often

For barbecued meats:
(cooked by indirect heat)
Baste the last hour of cooking. Basting sauces made from seasoned
oils and butters may be brushed on throughout the grilling adventure

Grilling Basics

For direct cooking, food is placed directly over the coals. Make sure
there is enough charcoal in a single layer to extend 1-2" beyond the
area of the food on the grill. Pour briquets into the grill to
determine quantity needed then stack them into pyramid to start until
you can "just tell by lookin".

For indirect cooking, food is placed over a drip pan and the coals
are banked to one or both sides of the pan. This method is
recommended for large cuts of meat, such as roasts, and fatty meats
to eliminate flare-ups On a 26" grill, it will take approx 30 coals
on each side of pan to cook for 45 minutes. Add 9 or 10 coals every
45 min. for additional cooking time.

How Hot is the Grill? If you don't have a grill thermometer and
(most don't). Here's a quick way to estimate your heat. Hold your
hand palm-down, just above the grill. Count "one-thousand=one"
etc....

If you can keep your hand in place before pulling away:
2 seconds-it's a hot fire.......(375)
3 seconds-it's medium hot...(350)
4 seconds-it's medium........(300)
5 seconds-it's a low fire......(250)

Grill Tip

Always wait until all of the flame has died down on your
outdoor charcoal before beginning to cook. Contrary to
popular belief, the coals provide more heat than an open
flame. They also cook more evenly and cause less flair-ups
that can add bad flavors to foods. For best results, wait
until most of the charcoal has turned at least 3/4ths
white.

Hints For Cakes & Angel Food Cakes

1 When baking, measure shortening before molasses
and it will not stick to the cup.

2 Have all the ingredients at room temperature.

3 Use cake flour only.

4 Egg whites must be clean and should not contain
a part of the yolks.

5 Have the sugar clean if beaten with the egg whites.
Even a bit of flour might damage the cake.

6 Fold in the flour and sugar mixture gently, using a
cake scraper. DO NOT BEAT IT!

7 Bake the cake in an ungreased tube pan. When
it is done, turn it upside down to cool.

8 Be careful not to overbake.

Use Microwave To Melt Chocolate:

Chocolate that is overheated may scorch, lose flavor and turn coarse
and grainy. Here's a good tip for melting chocolate in your microwave:
Place coarsely chopped chocolate in a microwave-safe container and
microwave at MEDIUM (50 percent power) for 1 1/2 to 4 minutes, until
the chocolate turns shiny. Between each minute remove chocolate from
the microwave and stir. Repeat until completely melted. Because of
their milk proteins, they need to be stirred sooner than dark
chocolate. (If overheated, these chocolates may become grainy.)

TOMATO STORAGE Tips:

You should store your tomatoes on the counter at room
temperature. Never put tomatoes in the refrigerator, the
cool temperatures will stop the ripening process and ruin
the tomato flavor.

Also, storing tomatoes next to bananas will make them ripen

FRESH ZUCCHINI TIPS:

They're great raw in vegetable platters, cooked, steamed,
fried, baked or microwaved. Good-quality zucchini should
be firm, smooth-skinned and small in size. The surface will
shiny and dark-green in color. Avoid product that is soft,
wrinkled, blemished or dull in appearance. Large squash will
be less tender than smaller product.

You can also shred them and freeze for future use. Just
place 2-cup portions in freezer bags. When you thaw out
the packages, you'll notice a great deal of moisture so

TIP FOR MAKING A SALAD A DAY AHEAD AND KEEPING IT FRESH:

Perfect if you are serving a big group and don't have the
time to make a fresh salad. Make the salad the day before
and then place the salad into buckets with lids or big
bowl and completely cover the salad with water. Store in

WHAT DOES "AL DENTE" MEAN ANYWAY?

You really want to avoid overcooking your pasta.
Take a cue from the Italians, and boil your pasta until
it's 'al dente,' which means 'to the tooth.' In other
words, it should be tender but slightly firm to the bite.
The longer you cook pasta, the mushier it gets.

FYI: Do not rinse pasta unless you're using it for a
cold pasta salad. Otherwise you'll rinse the starch off.

Did you add too much salt?

Add a cut-up raw potato and simmer it in the soup or stew for about 30
minutes. The potato serves as a sponge, absorbing salt. Discard it, or
save the potato and cook it until tender in unsalted water with other
raw potatoes for a boiled potato dish. If you don't have a potato for
the remedy, add more unsalted liquid (water, stock, etc.), a touch of
tomato sauce or chopped tomatoes (or something slightly sweet), and a
bit of lemon juice or vinegar to counter the saltiness.

Fresh Vegetables Grilling Chart:
If you have not tried your veggies grilled, are you in for a treat.
Here are some basics for you.

* Before grilling, cook in boiling water 5 to 10 minutes or until
crisp-tender.

** 10 Minutes **
Carrots, small whole, * partially cooked cherry tomatoes, whole
mushrooms, whole onions, cut into 1/2 inch slices potatoes, cut into
1-inch wedges * partially cooked

** 15 Minutes **
Bell peppers, cut into 1-inch strip eggplant, cut into 1/4-inch slice
green beans, whole zucchini, cut into 3/4-inch pieces

** 20 Minutes **
Asparagus spears, whole broccoli spears, cut lengthwise in half
cauliflower, cut lengthwise in half corn on the cob, husked and
wrapped in aluminum foil

Want to use less meat in your Stir Fry? Cut the slices thinner.
Put your meat in the freezer for 30 minutes and let it harden
before you slice it. You will be able to cut much thinner
strips, and you will be able to use less meat.

VEGETABLES -- THE LOW FAT WAY:

You can saute vegetables, etc., in 1 teaspoon or less of oil
in a non-stick pan. keep olive oil in a pump bottle and in
a spray bottle by my stove. For sauteeing, approximately
three pumps is a teaspoon of oil, then use a pastry brush
to spread the oil in the pan. If you just need to coat the
pan lightly with oil, use the spray bottle or a pastry brush
to apply oil. Use these methods for sauteing rather than
coating the pan with a cooking spray, since I find that the
lecithin in the cooking sprays burns easily, and it is
impossible to get the pan hot enough for a good saute
without burning the spray.

* When purchasing fresh spinach, choose leaves that are
crisp and dark green with a nice fresh fragrance. Avoid
spinach leaves that are limp, damaged or have yellow spots.

* Keep fresh spinach refrigerated in a plastic bag for up
to 3 days.

* Unwashed fresh spinach, which is usually very gritty, must
be thoroughly rinsed before using. Spinach may be used raw
in salads, or cooked (usually by boiling or sauteing) and used
as a vegetable or as part of a dish.

* Since fresh spinach shrinks when it is cooked, count on
one pound of the fresh leaves yielding about 1 1/2 cups cooked.

A simple process of clarifying butter for seafood or
sauces (Hollandaise) should start the day before
the butter is needed. Melt the butter in a saucepan.
Slowly bring it to a gentle boil. Boil for 2 minutes.
Remove from the heat and allow it to cool. Cover
and place in the refrigerator overnight. Make a small
hole near the edge. Carefully tilt the pan. The milk
solids should easily drain off from the bottom,
leaving the clarified butter. Re-heat at service
time.

Make your own croutons:

With stale or leftover bread, cut into small dice and
then gently fry in a mix of butter and olive oil till
golden in color. By adding the butter to the oil you get
that real gold color. These croutons can now be added to
salads or used as a garnish in soup.

To keep raw cut potatoes from turning brown: Place them in a bowl of
acidulated water (4 cups water & 4 tablespoons lemon juice or 2
teaspoons vinegar). Remove the potatoes as soon as possible to
prevent excess water absorption, which will dilute their flavor.

To whiten cut potatoes that have oxidized: If you’ve cut potatoes and
they have started to turn brown, cook them in milk at a bare simmer
to whiten them.

To keep potatoes white long after cooking: Add a few teaspoons of
lemon juice to the cooking water.

Shampoo, expensive or cheap, is specifically made to remove body oils and is fantastic at removing that "ring around the collar" on shirts and blouses. Just rub in and lather just like you do with your hair.

Have fleas in the house? Get rid of them while you sleep by using a small bowl filled with 1 to 2 inches of water and 2 tsp. of liquid dishwashing soap. Put a small lamp on the floor and place bowl under the lamp, turn off all other lights. The fleas will go towards the light and be trapped in the water.

When skinless tomatoes are needed, fill a pot with water, add some salt and bring it to the boil. Cut a cross into the skin of the tomato opposite the end which has the stem and when the water is boiling drop your tomatoes in for about 30 seconds, then remove and cool immediately. The skin will peel off easily.

Here’s the best deer repellant hint I’ve come across lately, and it might just work for other critters too. Poke holes, about 20 of them, in several one-pound empty coffee cans, drill small hole in bottom of cans, screw can onto a wooden dowel cut to a two foot length, old broom handle would work too, place in evenly spaced intervals around area that needs to be protected from the deer, fill with MOTHBALLS, place lid on can and presto no more deer eating plants in your flower beds. To use in your garden mount cans on tall poles.

If you have tea or coffee stains on your worktop counters
or walls here is a simple way to remove them. Simply mix
up a paste of baking soda (bicarbonate of soda) and water
and apply to the mark. Leave it for about 15 minutes and
wipe off. Won't discolor countertop either like some
commercial cleaning products do.

In general, firm muscle-type fish like tuna or swordfish
grill best. Salmon will cook well on the grill if the skin
is left on until cooking is finished. Avoid white, flaky

Quick Wine Serving Tips

* All white and pink wines are served chilled.
* Dry and medium-dry Sherries and light reds can be served slightly
chilled.
* All other red wines are ideally served at room temperature (65-68
degrees F). Many red wines, especially less mature ones, improve if
opened an hour or so before serving.
* Older red wines often contain sediment. The bottle should be set
upright several hours before pouring. It's a good idea also to decant
an older wine by pouring it into a clean carafe. Set a strong light or
candle behind the wine so that you can see the sediment. Stop pouring
as soon as sediment approaches the bottle's neck.

PERFECT COFFEE TIPS:

What goes better with morning sweets that the perfect cup
of Java? Here are some helpful tips for better brewing:

Keep coffee in an air tight container and store in a cool,
dark place. Try the freezer! For best results buy the whole
beans and grind them yourself just before use.

If you notice any traces of chlorine, iron, or other minerals
in your water, use a quality bottled or filtered water.
* Softened or distilled water will effect the flavor of the
coffee and should not to be used.

It's said the best water-to-coffee ratio is 1 tablespoon of
ground coffee or 2 tablespoons of whole beans for each 6
ounces of water. You be the judge.

NOTE: Boiling or reheating coffee literally boils away flavor.
A thermal carafe will keep the coffee hot for up to 2 hours
without losing any flavor.

The cream or sugar is a matter of preference so you're on your
own there ;o)

ONION STORAGE TIPS

Store onions in a cool, dry place with good air circulation
and away from bright light and out of any direct sunlight.

Place onions at least one foot away from walls to provide
air movement.

DO NOT store whole onions in plastic bags as lack of air
circulation reduces storage life.

DO NOT store onions with potatoes as potatoes give off
moisture that can cause onions to spoil.

SOME PORTABELLO MUSHROOM TIDBITS:

These mushrooms are the most impressive in size and appearance.
The Portabella mushroom is a larger, hardier relative of the
White and Crimini and can range up to 6 inches in diameter.
Portabellas have a longer growing cycle than Whites and
Criminis resulting in a deep, meat-like texture and flavor.

SHELF LIFE:
Portabellas should hold 7-10 days. Keep refrigerated in paper
bags.

You can serve whole or sliced, grilled, baked, or deep fried.
Excellent stuffed as an appetizer, side dish or entree. Add
to stir-frys, sautes and sauces. A great substitute for meat
in a sandwich or entree. Also used as a meat alternative in
vegetarian entrees.

</font><ul type="square"> <font size="2" face="Tahoma, Arial, sans-serif">4 tablespoons (1/2 stick) unsalted butter, softened</font> <font size="2" face="Tahoma, Arial, sans-serif">4 tablespoons canned pumpkin puree</font> <font size="2" face="Tahoma, Arial, sans-serif">1 teaspoon brown sugar</font> <font size="2" face="Tahoma, Arial, sans-serif">1 teaspoon cinnamon</font> <font size="2" face="Tahoma, Arial, sans-serif">1/8 teaspoon ground cloves</font> <font size="2" face="Tahoma, Arial, sans-serif">1/8 teaspoon ground ginger</font> <font size="2" face="Tahoma, Arial, sans-serif">1/8 teaspoon freshly grated or dried nutmeg</font> <font size="2" face="Tahoma, Arial, sans-serif">1/8 teaspoon salt</font>[/list]<font size="2" face="Tahoma, Arial, sans-serif">Combine butter with pumpkin, sugar and spices and mix well.Keep tightly covered in the refrigerator up to three weeks.
