Being a guitar player whose main influence is George, I'd have to say I admire the guitars he used almost as much as what he played on them.
My personal favorites are Rocky (psychedelic Stratocaster), George's Gretsch Tennessean and Duo Jet, his Epiphone Casino, his rosewood Fender Telecaster, his 12 string Rickenbacker, and his Gibson J-200 jumbo acoustic, which was used on For You Blue and Here Come's The Sun (two of my favorites) as well as the demo for While My Guitar Gently Weeps (my favorite).
As far as sound goes, I'd have to say my favorite Beatles guitar tone is from '68-70, when George usually played with his electric guitars through Leslie rotating speakers (usually used for organs). A very good example of this is the solo for the single version of Let It Be (although I personally prefer the album version).
And my favorite of George's Beatles guitar contributions (I love them all, but these are my top 10)

4. Slide solo on Free As A Bird
5. Rickenbacker 12 string on If I Needed Someone

9. "Let It Be" solo (album version)
10. Intro and solo on The Beatles cover of Roll Over Beethoven
